Southwest Corn Bake
Ingredients
- 2- 1Ib. cans of cream-style corn
- 2 eggs
- ¾ cup yellow cornmeal
- 1 tsp. garlic salt
- 6 tbsp. vegetable oil
Directions
- Preheat oven to 350°F and grease an 8x8x2 pan.
- Mix together all your ingredients: cream-style corn, eggs, cornmeal, garlic salt, and vegetable oil.
- Put half of this mixture in pan and add 7 oz. diced green chile.
- Top with 2 cups of grated cheddar cheese. Then top with the rest of the corn mixture.
- Bake 60 to 70 minutes, or until golden and knife comes out clean.
- Best to let rest for 30 minutes before serving.
