Southwest Corn Bake

Southwest Corn Bake

Ingredients

  • 2- 1Ib. cans of cream-style corn
  • 2 eggs
  • ¾ cup yellow cornmeal
  • 1 tsp. garlic salt
  • 6 tbsp. vegetable oil

Directions

  1. Preheat oven to 350°F and grease an 8x8x2 pan.
  2. Mix together all your ingredients: cream-style corn, eggs, cornmeal, garlic salt, and vegetable oil.
  3. Put half of this mixture in pan and add 7 oz. diced green chile.
  4. Top with 2 cups of grated cheddar cheese. Then top with the rest of the corn mixture.
  5. Bake 60 to 70 minutes, or until golden and knife comes out clean.
  6. Best to let rest for 30 minutes before serving.
